June 1 Solar Eclipse, one of Three

A Beautiful Memorial Day, Reflecting and Food

It was just a beautiful day, a beautiful Memorial Day with lots of memories for me. I visited with dear friends and sat on a park bench and chatted with another new friend! I went to Goat Feathers to do some re-arranging in my booth and visited with a lovely older gentleman, his wife and their friends they brought into the store.

We had met about two weeks ago in the store, laughed and talked , he is 84 years young, a Veteran, and shared some stories with us. They remembered me today and shared they had just been to the Veterans Cemetery here for the Memorial Day ceremony. It was lovely. God Bless them all!

Well, our little Boulder City “Central Market” has just the BEST FRESH PRODUCE I have ever seen. I go there rather than the big stores most of the time. Everything is FRESH; there is a brand there, Western Family, which is wonderful!

If you are ever here visiting, please stop by, say hello, it is a lovely little place! Bring your cooler because you will want to “transport” some of this fresh food back to your house! :P

I have been buying their homemade “Salsa” and “Corn and Black Bean Salsa” and well, I can eat one container with a spoon! So I am attempting to make my own (so it might last a little longer than 10 minutes! LOL) If I had a plastic spoon in the car ( Hummmm great idea! LOL) it would be gone by the time I got home! It is THAT GOOD!

So here we go, my version, as I type this, is “melding flavors” in the fridge! It is very hard not to grab a big spoon and watch HGTV with it! BUT I will wait until tomorrow, maybe a “side” with Eggs Ranchero! Woo HOO NOW I am hungry again! :P In the Summer, I just love the fresh veggies!

By the pictures, you will see it will be a great week of fresh recipes for me!

Here is my recipe; I will let you know how it turned out. You can start with this as a “base” I believe, I have not added any spices to it, I might add just a hint of kosher salt and a little freshly ground pepper later and give it a stir.

If you try it, or have any other suggestions on what to add as a little “zing” please leave me a comment, and if you try it, please let me know how yours turned out? :P

PS I recently invested in the “onion” “tomato” and the “lemon” “keepers! They are plastic, and I figure frugal me will save on the Zip Locks and utilize these instead! Guess what! THEY WORK GREAT! No spoiling, no smells, no fridge smells, nothing!

I am VERY pleased and just passing this along! So for the cost of about a “box” of zip locks ($4.50) you too can save on the storage of that cut up lemon or mater or onion and oh yes they have all the veggies, the red and green bell and the red onion etc. so you know what is in them! GENIUS! BRILLIANT!


Kats Version Corn and Black Bean Salsa

1 Yellow Onion (I used half because it was very large!)

1 Jalapeno Pepper, or more, your taste, (split, take the seeds out unless you like it VERY HOT!)

½ Red Bell Pepper (it was a large one!)

1 Red Tomato (all of it, seeds and all)

1 Orange Tomato (special today at the Central Market and just gorgeous!)

1 Yellow Tomato (another special very sweet! So I am trying it!)

A bunch of Cilantro, finely chopped

1 Can of Black Beans (rinsed under cold water and let them dry a little before adding)

4 Ears of Fresh Corn, boiled (special at the Market, 2 for a dollar, sweet corn!) I boiled them, and cut the kernels off with a knife and separated them; however, you may like the small sweet frozen variety as an option)
Chop everything (not the black beans) up as small as you can, carefully mix together, cover and store in fridge overnight.

I am hoping all the flavors will meld and taste like the Central Market’s Fingers Crossed!
**UPDATE UPDATE: The salsa turned out great! I love it! But here are a few changes! Add a few finely chopped green onions with the green part, use canned corn, rinse well. Hope you have fun experimenting! Love Kat

Memorial Day - Honor our Service Men and Women

Memorial Day

A day to honor, but really should be everyday! God bless our service Men and Women! They sacrifice everyday so that we may live in Freedom!

When we are enjoying our families, sleeping in our beds, having a nice meal, being with our kids, the little things we take for granted, they are not.

Please keep our military men and women in our thoughts and prayers to return home safe, wherever they may be, as they sacrifice so very much.

This coming Monday is Memorial Day. The above title is a link to infoplease.com, for all the important history about "Decoration Day" currently known as "Memorial Day" in honor of our nation's Military.

"Memorial Day, holiday in the United States observed in late May. Previously designated Decoration Day, it was inaugurated in 1868 by Gen. John A. Logan for the purpose of decorating the graves of Civil War veterans and has since become a day on which all war dead are commemorated."

There are so many beautiful Bronze Artworks in our little city! These Eagles in Flight sit atop a very large rock on the corner of our main highway into town. They are magestic! My camera does them no justice!

The statue is at least 10 feet tall if not taller! Really, I just stood there and stared at it, trying to get the both of them in the picture. When the wind blows, the Eagles turn. When the Sun hits them in a certain way, there are many colors in the Bronze. It is just amazing and so very beautiful! I hope you enjoy these pictures, With Love, Kat =^.^=

May I love May!

Good day sunshines! May is a wonderful month! The weather is just right and one can dig n get dirty in the garden!

I was looking at pictures last nite and found this one, it is small but you get the picture!

Our Dad made what he called a "tote goat" many years ago. He was a very handy MAN, in other words he would BUILD THINGS THAT WOULD OUTLAST anything because it was done right! And he taught us how to "pack!" LOL

I remember he made me a dollhouse in the backyard of my Nana's house. I was the only child at that time. Seven years later came my lil Sis and we had a lot of fun together!

Our Nana had moved in with us at that time in another city and I don't think Lil Sis ever had the chance to play in that little dollhouse, my memory fades! LOL

I will find some pictures, hopefully someday and will post them. It did have two windows, a pitched roof a front door with a glass window top and solid bottom and the whole thing was covered in cedar shingles! Today that little house would cost a small fortune! Were you that lucky? I loved that little house and played in it for HOURS! What did your play area look like?

New Hoover Dam Bridge Construction

Happy Monday! What a great day!

Today was an especially good day! Weather is 81 deg with 31 mph winds, the clouds are beautiful and I have a little visitor again!

I think he has moved in for a little while until he gets some strength back! We had a little talk, he is welcome to stay with me forever! I am truly blessed! I hope you had a special day too?




As you can tell I am very fond of birds and also insects but thats another story! Anyway this little guy was in my driveway last week, I backed the car out and there he stood in all his little glory! Just staring at me like, why did you move my shade!!

So I got out and scooted him over behind the side yard in the shade and thought Momma Bird was surely somewhere watchin over this little baby. I have not seen her and today he was back, by the front door, sittin in my boots, they were just a wee bit big for him LOL and I was surprised, as we were talking, that I could get about a foot away to take a picture of him. He is SO cute!

He has that wide baby mouth, he can fly just a little but not enough just yet so I am the watchful Nana over him for now. Put some water in a dish and a squiggly worm, his comment was "thanks for the water, that squiggly thing, not so much!" so off that little worm went back in the garden. Isn't he just the cutest little guy! I love him! I have a ton of birds in my yard daily in the afternoon. They make such beautiful music!

Isn't it always nice to have a "sign" to slow one down sometimes? Something out of the ordinary to catch your interest? Have you had any experiences like this and didn't it make you feel special? It is nice to have "thought" ful experiences, to reflect perhaps, and be "thank" ful for a little Mother Nature in your life and so close!

I just sat on the bench on the porch and watched this little living thing star at me. He wasn't afraid and that was wonderful. He will probably fly away next week, he can almost make it over the 4 footer fence on the side yard and I will be happy then, as I worry about him just a few feet off the ground you know! So I "check on him alot! :P
